Has anyone here been on a build your own bike frame course before? What was it like and would you recommend it?

Yes & Yes.

Was quite a while ago now. 26" wheel Singlespeed frame, now living in the loft.

Stayer https://www.stayercycles.com/product/framebuilding-101 are looking like they're a good option.
