The signs said stalking takes place from 1st July to February 15th. Maybe no one pays to shoot Roe deer?
So, basically ignore them. That's unacceptable restriction.

Should be no bother on the main track through (it was fine in August and October), just leave your helmet with antler attachments at home

I mentioned a book about a winter Munro round, now found it and it's called 'Hell of a journey' by Mike Cawthorne - as you were.
May the bridges you burn light your way

You could do this..Two Forts
https://www.justgoride.co.uk/Routes/9517
Distance: 177.05 km
Climb: 2,434.66 m
Start in Fort Augustus, up and over the Corrieyairack Pass, coffee and cake at Wolftrax, over night in Staoineag bothy. Ice Factor, Kinlochleven for breakfast. West Highland Way to Fort William, Great Glen Way to Fort Augustus.
Job done.

I'd be tempted to do that the other way round - the west to east corrieairyack descent is punctuated by massive water bars, going up the abhain rath would be a schlep and the whw out of KLL is a grim climb but a nice descent.... Abhain rath will be uncrossable at the mo I suspect

Some mates have just reached Newtonmore via the Corrieyairack and report waist-deep snow at the top
