I am 6’1” ish and built big and a stone heavier than you. I wear an XL. It is a bit boxy but I find the arms reasonably long enough. I wouldn’t be surprised if a large would fit you.

I've had (still got) a couple of Paramo things including the Velez. They are good for a few hours of rain, they do wet out eventually. Heavy and bulky to carry when it is dry. My experience is that if they are treated they don’t wet out... or at least the outer may be or look wet but it still works...

I have ridden miles on JJs on and off road. They roll just fine. A lot of the difference is in how the fat bike feels is in how it steers/handles rather than in the rolling resistance.

I've been running all off road bikes tubeless for about 7 years now. Tyre pressures obvs depends on many factors. Enve do a good calculator. FWIW I run 35psi on 42mm tyres and 21 psi on 55mm.
