There's an old guide book which is still available, East Midlands Mountain Bike Guide. That has three routes in Nottinghamshire and many more in Leicestershire.

I've done a couple of the Northamptonshire ones and they're not bad. A mix of bridleways and byways with a few quiet lanes thrown in.

I've got a 200km route in NE Notts that dips into Lincs, 75% off road, no main roads. Gravel bike suitable. Send me DM if you're interested and I'll send you a link to the RWGPS.
