Winter bikes, yes, lovely. This one in particular, makes discs look right on a classic-looking road bike which I expect isn't easy

Right. I know this is a bit marmite but if someone came to me and said you can have an unlimited budget for a bike you know you'd never be able to justify purchasing/building in the 'real world'. I would buy a Retrotec twin, rigid, single speed, designed for probably B+ wheels, flat bars. Literally for just ragging around the woods, paths and maybe the odd trail centre if I was feeling brave.
p.s. it annoys me that this pictured bike has a slack chain!

^ seeing that reminded me of how much I wanted something like this - a summer/dry days SS with v-brakes, silver kit, 29er. As close to a practical and classic MTB as I could justify owning. And McClungs do it for me, love the forks.
But my Jones does all that one of those would do, and more. I guess I just still want a clunker : )

I have a Van Dessel WTF, which is pretty much a production retrotec. The ride is great and it looks vaguely exciting IMO, its a little short, and a little low at the front, so if I could justify the cost I would love a custom 853 fillet brazed version.... 40mm shorter, 30mm more stack. (Heads to desktop to look at the Retrotec site!)

I class my Jones Ti SpaceFrame as a custom
As it's only 1 of 200 made by Merlin (USA) to Jeff's ultimate design (Jeff couldn't bend the seat tube, but Merlin could)
I've a fat truss fork fitted a half fat option and a 35mm rim 29er front and back option, plus I've Rohloff'ed it.
It's gets used nearly every Thursday night for our club rides.
It's maintenance free, post ride lube the chain, pre ride if I can be bothered just brush off the dried on mud. It's a joy to ride.

At the risk of appearing snidey isn't a Jones the absolute antithesis of custom as you can barely get them in a range of sizes or colours, let alone customised to your own measurements!?

Yeah, I'm with you there, but if you think about it, a lefty doesn't flex really any more than a normal fork. So I guess it's fine. Looks weak though.
