Camino del Cid, you're (like me) just old enough to remember the Charlton Heston film El Cid, a medieval knight who fought his way around central Spain almost 1,000 years ago. The route runs from north of Burgos to Alicante, around 1,100km which different routes depending on your choice of transport. I've ridden about 400km of it on the mountainbike version and it is a great way of seeing lesser known bits of Spain, the website is very comprehensive and in English. I'd be inclined to fly to Bilbao from Manchester, take the train to Burgos and fly back from Alicante. If you want help with logistics, give me a shout. https://en.caminodelcid.org/
Oh, and the beer here is not all Costas lager, there's a thriving ale market and lots of local breweries if you know where to look.

The Rhine?
Good beer, good food, and depending which end you start uphill or down hill all the way.

Or the Danube Cycleway, deffo good beer to be had. https://www.danube-cycle-path.com/
The whole 1,800miles might be a stretch but Germany to Hungary seems the best bit.

That looks good, and reminded me of EuroVelo 13, the Iron Curtain Trail, it is 9,950km long though. Tim Moore wrote a book about it too -> The Cyclist Who Went Out in the Cold: Adventures Along the Iron Curtain Trailpistonbroke wrote: ↑Mon Jan 27, 2020 12:10 am Or the Danube Cycleway, deffo good beer to be had. https://www.danube-cycle-path.com/
There are theories at the bottom of my jargon.

During summer?
Does Touring also include gravel tracks, easy offroad?
May sound a bit boring, but how about

I'm sure I don't know the UK as good as most on here, but I really enjoyed riding across it, visiting places new to me and some I had been to as a child/teenager. The variety, the fun we had... it was amazing.
If you enjoyed Scandinavia, how about following Andy Cox's route?

The Lofoten being really stunning and one of a kind of Landscape, this would be quite different, but looks amazing too.
And likely fun on any sort of bike.
I don't know the route, but many towns in Scandinavia have great bars.
If the trip is planned for Autumn, how about Montanas Vacias?
https://montanasvacias.com/route/ Never been, but looks lovely. Not so cool on the beer front though.
Or Iceland in September, when it gets a bit quieter? Many absolutely breathtaking places to visit, open air bathing in geothermic springs, a wonderful density of breweries (yet likely one of the most expensive countries to drink beer) and any mix of roads and gravel you fancy.

Seriously, it's not a route I'd consider taking 3 weeks over, there are not enough places to stop and explore and you have to do a decent mileage each day simply to find food and civilisation. A group of us took 7 days over it in Sept and that's about the right pace.
Ernesto the guy behind it is working on a MV XL route at the moment which extends to about 2,000km it's the same type of barren landscape and uses a lot of the trails I'm riding on the Spanish Divide in April.
Re: 3 week tour idea's.
thanks everyone, all the idea's look fantastic.
the danube is on our list. the mrs likes flat or flatter riding. so that looks like a good possibility.

I’d also have a look at the Dalmatian coast of Croatia.
Good scenery, sunshine and island hopping

Ireland?
No experience of it, but it's a fairly handy destination.
