Trying to buy GRX and the Holy Grail

I am finding it impossible to buy a SHIMANO GRX 600 DOUBLE CHAINSET 11 speed 36/40 172.5.
Are there any more available alternatives that would do the job with an 11 40 rear an ultegra gs rear deralliuer
and whatever front deralliuer it needs, as i've still to buy a front.
Even Amazon is out of stock but they do have the Holy Grail, its from China.

tried my Ultregra RX mech with a 40T cassette once, didn't like it
Works fine with a 36T SRAM cassette
