I've seen pics of such a set up on the Jones Blog - Big apples on Jones c rims which are 50mm. I think he used the 2.35 though. I think you can get 2.5 big apples as well??

This should help.
2” is almost certainly going to be too small. 2.35 may work, after all you’d be happy running a 25or28mm tyre on a 25mm rim.

If you are going through hell, keep going.

You'd probably have to use a perfect method of mounting the tyre though Ton. Seems a 2.35 on a 50mm (inner width I assume we're talking here) is gonna be a fair old stretch. Might need to make sure the tyre is warmed a little first to ensure it keeps its pliability a bit more...

NB. I might be missing the point (and feel free to tell me I've lost the plot) but, a 2" on a 50mm rim width... Forget about that even if you did get it on (after some choice words and broken levers and possibly v v v sore fingers), I doubt it'd ever come off

just seen that the G ones are available in a 2.35. that might be the option
unless a 3'' slick is available?

Isn't it all going to be a bit, well, square?

Course it'd be rather blocky, but I'd give it a go. Big Apples are actually a nice supple tyre as long as you don't pump em up too much.
I'm just going outside ...

It's an almost perfectly rounded tyre with no edges so it shouldn't go square.
I think a 2.35" Big Apple on a 50mm rim would be fine Tony. I might even be able to do a test for you...
edit - one of the tyres I got off you last year, 45mm rim:

I ran BA 2.35 on 30mm internal rims.
Plenty of shape in the tyre so another 10mm each side should be ok.
Once on and inflated they tend to stretch and become easier to get off if you need to but might need to get your heel
to press the bead away to start with.
edit
Currently running G-Ones 2.25 on the same rims and they look bigger than the BA 2.35.

Zazen - nothing happens next this is it.

2.4 holy rollers on a 50mm rim were a lot of fun.
Surly extra terrestrial 2.5" seem like they'd work well.

I use extra terrestrials on 47mm rims with no bother, excellent tyres
