Average full frame bag will use ±0.25m² of fabric. So excluding zippers, buckles, etc. a bag will weigh ±50g in VX21 and ±70g in Cordura 500. Only 20g difference!!
Cordura is readily available for £4.50/m², VX21 is three times that price. Cordura is slightly easier to shape for sewing.

If this is your first bag, my advice would be to make a mock up in cheap material (old bedsheet perhaps). It won't look great but will teach you a lot about procedure.

Great work! The document pocket sounds like a handy addition, do you have any photos of it?
