11 speed chain should work. The spacing between the inner plates is the same as regular 3/32" chain, it's the outer plates that are slimmed down to give the chain a narrower overall width. Downside to that chainring is it's not narrow/wide, so you'll probably want to give some thought to other ...

Also, not sure if it's the angle of the picture or something, but do the drops on that Gryphon look a bit weird? They look like flared drops (like Bearbonesnorm mentioned). Not tried the Ergons to compare, but I've been happy with Evans's own brand ones on both my MTB and polo bikes. Single lock-on collar on the outside of the grip.

I'm using a 10s 11-42.
I've had it set up with an SLX Shadow+ long cage mech and SLX RF+ shifter. This has been run both with a longer B-tension screw, and with a Wolftooth Goat link. The latter set up is much better.

I've used 40mm plastic waste pipe. Drilled a hole through it with a 32mm hole-saw, then cut the pipe through the hole to give me two semi-circular stand-offs that fit nicely round 31.8mm diameter bars.
