The Wicklow Way is a good route, about 130km and is mostly off-road with some quiet roads thrown in. I went from Clonegall to Marley Park then returned via road to the car (good shoulder, mostly downhil ). Here's a link to the track.

A few years ago it was the HT440 and then Alan added the top loop. I think there are some slight variations due locked gates, bridges out etc but mostly it's the same.

I've Ergon GP3s with On-One OG bars. Worked perfectly well on the HT550 this year. The GP3s offer a lot of different positions for long days. Admittedly, I rarely get points for style

The On-One OG bars are worth a look too. I have them on my bike and like them a lot. Fitted with Ergon GP3 grips, give loads of different hand positions. The Wild Atlantic Way in Ireland is all sealed, most of it is on quiet roads and in fairly good condition. A great cycle with plenty of pubs, food and accommodation options along the route. It starts in Derry and ends in Kinsale. Could maybe fly into Dublin, stay in a B&B and let your gear there...

I'm open to correction but I'd have thought if you restart an ITT from the beginning again then the clock resets.
