Personally, I set my camera to spot metering, point it at what I want to have as both the focus and meter point (often, but not always the same thing) then I compose the shot after that. My photos aren't great, but have improved by changing from just using full auto (program mode?) all the time to using aperture priority most of the time - think about whether the photo would benefit from a deep depth of field - for example to keep both foreground and background in focus (= small ap...

Composition and light are everything. As Chew says, most photos can be corrected later from a exposure perspective. I spend quite a lot of time doing that sort of adjustment. The Tubus Stainless racks are rather nice to look at, and they wear well as well.
It's worth noting their anodised aluminium ones don't wear that well, and start looking tatty pretty quickly. All impressively well made, though.

You'll be able to get yourself a fully-featured camera that's pretty compact, you can run just about any glass on it, and you've got a traditional viewfinder (hell, you can even go for a digital rangefinder if that's your thing). Yeah, I looked into those 'smart hard drive' things, but as you can see from the B&H link, they are eye-wateringly expensive. I think the cheapest I have found was over £300. I think Joe's Pi cost me £25 or something. I will look into getting one of those doofers to interface the USB stick with...
