Should fit you fine - plenty of stand over. My wife is 5’10” and she’s ridden it happily with a shorter stem.

I found OG bars great for ages then suddenly started getting numbness. I found jones bars too sweepy (like a wheel barrow). The next ones i settled on were sq lab bars with a nice 16deg sweep (ox30 I think?), not especially flexy but a really nice shape with Goldilocks amount of sweep for me. Am now...

I had to sew a couple of loops on to the underside of the bag. Cross bar was a bit of old walking pole. Have you got a braze on for a rack/mudguard? If so I made a great little mount on my vagabond using an old disc brake adapter that positioned the light just above the cassette.
