GP1s here on my Jones loops (cut down to 680mm). Very comfy, good for 1,000 miles across France last year. Not going to change them. GP3s on normal bars on another bike, again comfy but they're not for loops.
I've not tried GC1s, would there be much difference?

My issue is not one of strict compliance with a GPX file - they're not that accurate and can show slightly differently on different devices. To my mind you use the track as you see it on the ground (assuming its a proper RoW). So long as it's within 100 metres or so of the intended route there's not...

If you can find a left hand lever, I have a 10sp 105 STI 5700 right hand lever that's going spare.
