By large tyres, i mean large relative to most standard road bikes, so up to 35-40 mm would be perfect. As regards the other two Salsa bikes mentioned, then yes they fit that bill but I want something more road centric, I'll take a look at the Specialized and see if that fits the bill.

Looks a good option. I’ve had a look on the BP site for inspiration but wondered what the logistics are for getting back to the start? Train seems a bit of a faff and expensive, or can you ride back?

I think there's an element of user understanding in all this too. There's a number of people over-packing lightweight bikepacking bags and in the end, as you say, simply having more weight high up that can have a detrimental effect on handling imo. Is it worth doing?
Myself and my wife were going to Israel to ride the Holy Land trail but the Covid-19 madness has stopped it. We just fancied 3 to 4 days of something mtb based or are there any other options you good people would recommend? We're East Midlands/North West based.
