8 speed Shimano Altus drivetrain: Front and rear mechs and shifters, and 11-32 cassette. Used but if I remember correctly everything work fine and there's still life in the cassette.

Hollowtech 2 will fit in the shell so that gives you plenty of options. The big problem at the moment is actually finding anything. I think that's the key thing here. I get the straps quite close to the limit as well so stuffing the bag better is the key. Also, there's a chance that your straps are just a tad too long. Shortening them is not that complicated.

Just got back from the South Downs Way. The ITW Nexus performed flawlessly. No more sudden releases when dropping the rear wheel or while tightening the straps. Thanks for the suggestion again Shewie
