I'm using a Tubus Vega Evo with a drybag. Superlight and not expensive. Think the rack is 600 grams and can take 25kg. Of course if you have a carbon frame with nowhere to fix the rack you have to look for other options.

I've just been looking for something like this:
29er, flat bar, low gearing (2x compatible), reasonably upright riding position for comfort, 100mm front suspension/rigid fork option. Mounts for rear-rack, mudguards and 3 bottle cages. And can I have a BSA bottom bracket on the side, please.

Hello again, I seem to have been going round in a great big circle in my search for a hardtail. I am now back at Smokestone's Mr Harry's Flatmate, due to my preference for non-slack 2x bike setups. Thanks a lot for all the answers, lots to think about. I will look up the lauf forks and the procaliber, although I have always avoided carbon. Thanks for all the replies. Very helpful. I have managed to find a Cube hardtail that seems to be pretty much spot on, - well on paper anyway. It was in stock as well, so will see when it gets here.
