I have a GRX 1x on my Salsa Vaya. Basically the 600 setup with 40 tooth chain ring and 11-42 on the back. Love it. Plenty enough for the hills in the peaks, both on and off road.

My daughter can’t gave gluten. Always best to cook from basic ingredients if possible. Tesco have a very good range of products under their “Free from” range. Even get gluten free beer!!
