Maybe, but it could end up pretty wide - one for the bow legged cowboy types…. unless a custom thin bladder is employed that is.

How feasible would it be, to remove the bite valve, and refill through the hose? Very easy I would say, although the air needs to be able to escape somewhere as you pump water in. Any modern bike is going to be hard to get spares for in large parts of the world. However, riding a fat bike is going to make it harder by an order of magnitude.
It’s all very well relying on getting spares posted in but you may be waiting a very long time on parts of the route this dude is riding.

google Dutch M90 NATO issue Olive Green "Gore-tex" Military Bivvy. Has a top side diagonal opening with studs and velcro that might do. Long zips are common on military bivi bags - for getting out in a hurry - but as said above they tend to be heavier than most folk want for bike packing.
