I'll add that you may find it's ultimately far cheaper to buy a full bike for more rather than a cheaper bike with the intention of upgrading it with forks, drivetrain etc. This was my first thought. Way of the Roses is pleasant but is mostly on roads, including a couple of stretches of main road which I know some people aren't keen on.

What are your logistics plans wrt to travel at either end and bike bags/boxes etc chaps? I was thinking of flying into and out of Rome and doing a train to Pompei and then back from Rovereto. Gives the otion of leaving a bike box at left luggage in Rome, plus miles more options for flights...
