Anyone know of a bottle cage with the bolt holes right at the bottom, so the cage essentially mounts very high up?

Same as everyone here. I suspect the hubs in the first post are Novatec / Bitex and will more than likely be absolutely fine.

I have a set of hunts, trailwides from 2021. They need new grease in the freehub a bit more often than some DT Swiss I have, but other than that just keep on running.

Has anyone particularly looked at longer saddles? My absolute favourite is a Chromag Trailmaster, which are hard to get in the UK. I have also seen that brooks cambium is almost as long, I had a C15 in the past and didn't get on with it but someone suggested a C17 carved may work more comparably to ...
