Maxxis B+ tyre - some advise please....

Having a couple of B+ bikes and with the imminent onslaught of winter I'm after some more suitable rubber than my wtb ranger/trail boss combo.
I've always seems to get on with Maxxis so thinking I'd give them a shot.
So, a couple questions:
Which tyres? I've got on with HR and HR2s on 26 & 29er respectively, so happy to try that on the front. What about minions though, never had any so no direct experience. I'll trade grip/pick up over drag on the front but HR F&R on the 26 was drrrrraggggggeeee... 29er choice is HR2 F/Ardent Rs a result. Rekon worth a shout for the rear?
What compound? Is it worth the extra for triple over dual compound (other than the weight saving) as triple seems to be £15+ more on already expensive tyres...
Anything else to consider?
Oh, I'm looking 2,8" as 35mm rims on the SolarisMAX and I need a thinner tyre than the 3" on the Sherpa as I can't get into the bottom two gears at present (non boost crankset...)...
