I could get away with one bike if I had two sets of wheels for it. Some kind of disc-braked gravel thing with a double chainset. One set of road wheels with 28-32mm tyres and a close ratio cassette, and one set with 45-50 mm (maybe 650B) tyres and a wide ratio cassette.

All steel has pretty much the same stiffness. More to do with the tube diameters, wall thickness, frame construction and geometry.

bikehike, ridewithgps and gpxeditor all have Open Cycle Maps, which have shaded relief. ridewithgps also has the esri topo maps which look quite good.
Horizontal scale is metric, vertical is in feet. ~X(
