Would second the anchovy route although not had cause to try them yet. My thoughts about not wanting to rely on a spare tube are due to me thinking that the inside of my tyre is likely to be covered with sharp thorns etc which have been sealed by the stans. If I chuck a tube in I could see it instan...

Have you considered some kind of 29er? Something that will accept decent mountain bike tyres and also let you fit cross tyres or similar for more road type stuff? Given your budget, I'd avoid suspension forks as they'll be heavy, non-too good and won't last very long. Something rigid like this 'ere...

Do you actually notice more people bikepacking when on your little rides out or is it mainly a rise in internet chatter and sponsored soft-packing type events? When a large part of the appeal can be the isolation I can see how a rise in popularity could be annoying. On the other hand, there wouldn't...

I know you say "not an islabike" but why not a secondhand one? Got my girl a lovely one for £200 last year and will probably be able to get most, if not all, of that back when she needs a new one next year.

If your little you could get a small 2016 Croix de Fer. Loving mine. 2017 version seems a bit steep though for a new paint colour.

I do however own an increasing amount of things to attach to my bike so hopefully won't be long.

According to 18bikes, with my 2x and mid cage RD I will be able to get to a 36 tooth max. Would still be the best part of £100 to get there as well. Think that for only a 2 tooth gain I am probably better off getting one of Stu's stickers!

The problem with changing the mech is that this will almost certainly involve a change of shifter as well. Probably looking at £100+ for new mech, cassette and shifter.
