This might sound stupid but why don't you just use a bin-liner or plastic bag? You won't need to worry about the size then or extra weight/bulk of a drybag. I always put the things I 'NEED' to keep dry inside a plastic bag regardless of what I'm using to carry them in.

Good stuff! It's made me think that I should carry solid-fuel tabs in case of emergency too...I've heard some are better than others, is there a brand you recommend?

Please excuse the rough drawing skills! All measurements were taken with the bag laid flat.
You wouldn't be able to make it any narrower than the reinforced area...looking at a picture of the smaller bag, that area does look narrower.

The Bikepack bags are fairly waterproof but I still put the contents I want to keep dry in plastic bags, that helps with organisation too. I'd say go for a GoPro too...if only for it lending itself well to mounting on your chest. In my own opinion (and plently of other folks') that provides the best angle and most stable POV footage. I love mine. I also have the 3L one but mainly use the 2.5. The biggest thing to watch in the smaller one is the type of bladder you use...I use a 3L Source one but fold the top over, the Camelbak ones don't fit very well at all. I'm surprised no one has mentioned pot (or bag in this case) cosies. They enable your food to cook quicker and stop you from burning your hands when eating straight out of the bag. It would depend on the time of year for me...I would struggle to carry my synthetic winter bag whilst bikebacking, it would require a backpack all of it's own! I have no idea on the Airlocks durability but always I wrap anything that is down in plastic bag as well. There's no point taking chances for the couple of grams it adds.

I'm the opposite and have landed on my back quite a few times...this has happened whilst riding like a lunatic though, not something I'd do when bikepacking or carrying my camera gear.I always land on my chest when I fall off.
